What You’ll Need
- 1 lb Italian pork sausage
- 1 small onion
- potatoes thinly sliced (eyeball amount based on your liking)
- 1 green bell pepper
- Frozen corn
- 1-14.5oz can kidney beans
- 1-14.5oz can diced tomatoes
- 2 tsp minced garlic
- 1 tsp tabasco sauce (or more if you like spice)
- 1/2 cup beef broth (I like to use better than bullion paste)
- 1/2 tsp chili powder
- 1 cup shredded colby chack cheese from @the.cheesery 😉
- Salt & Pepper
- Other toppings: cilantro, sour cream
Steps
- Brown the sausage and onion in a skillet
- Add the sausage & onion mixture to the crockpot and top with sliced potatoes
- Add the bell pepper, corn, kidney beans, tomatoes, garlic, tabasco sauce, beef broth, chili powder, and salt & pepper to taste
- Stir everything together and cook on high for 3-5 hours or low 5-7 hours, or until potatoes are tender
- Add grated cheese to the top and allow it to melt. Serve with sour cream and cilantro if desired.
