Cowboy Caviar is very versatile. I stick to the dressing recipe, but often mix up the veggies and the amounts I add when I make it. It’ll buff and it always turns out delicious.
Cowboy Caviar
Ingredients
- 1 bell pepper
- 3 roma tomatoes (or one large tomato)
- 1/2 red onion
- 1 can black beans
- 1 can black-eyed peas -or- chickpeas
- 1.5 cups sweet corn
Dressing
- 1/2 cup olive oil
- 1/3 cup white vinegar
- 1/2 cup chopped fresh cilantro
- 1 lime zested & Juiced
- 1/4 cup sugar
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp garlic powder
Instructions
- Chop all the veggies and add them to a large bowl. Gently stir them around to combine
- Whisk together dressing ingredients, pour over top of vegetables
- Cover and refrigerate for a few hours to let the flavors come together. Serve.
- Will store in the fridge for a few days. If you want to make it last longer, omit the tomatoes. They are the first thing in the recipe to start to breakdown.
