Cowboy Caviar

Cowboy Caviar is very versatile. I stick to the dressing recipe, but often mix up the veggies and the amounts I add when I make it. It’ll buff and it always turns out delicious.

Cowboy Caviar

Ingredients
  

  • 1 bell pepper
  • 3 roma tomatoes (or one large tomato)
  • 1/2 red onion
  • 1 can black beans
  • 1 can black-eyed peas -or- chickpeas
  • 1.5 cups sweet corn

Dressing

  • 1/2 cup olive oil
  • 1/3 cup white vinegar
  • 1/2 cup chopped fresh cilantro
  • 1 lime zested & Juiced
  • 1/4 cup sugar
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp garlic powder

Instructions
 

  • Chop all the veggies and add them to a large bowl. Gently stir them around to combine
  • Whisk together dressing ingredients, pour over top of vegetables
  • Cover and refrigerate for a few hours to let the flavors come together. Serve.
  • Will store in the fridge for a few days. If you want to make it last longer, omit the tomatoes. They are the first thing in the recipe to start to breakdown.
