Preheat oven or smoker to 375 degrees
Slice chicken breasts so they're more like the size of a tenderloin
season on both sides with salt & pepper
Wrap each chicken breast with 1-2 slices of bacon
Mix honey & mustard together in a small bowl
Split off 1/2 cup of the honey & Mustard mixture to baste the raw chicken. Using a basting brush, slather each chicken breast with the honey mustard mixture on both sides
Bake or smoke until internal temperature of the chicken breasts reaches 165.
Brush on the remaining honey & mustard mixture about 3 minutes before the chicken is finished cooking.
Serve!
