Maple Bacon Dijon Chicken

Ingredients
  

Crock Pot Chicken
  • 1 whole Chicken 3-4lb chicken, if it's bigger adjust seasonings accordingly
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/4 cup butter
  • 1/4 cup chicken broth or water
  • 1 lemon cut in half
Maple Bacon Dijon Glaze
  • 1/2 lb cooked bacon
  • 1/2 cup maple syrup
  • 1/3 cup dijon mustard

Method
 

Crock Pot Chicken
  1. Take the raw chicken out of the packaging and pat the skin dry.
  2. Drizzle on olive oil, use a basing brush to coat the chicken evenly
  3. Mix the spices together and sprinkle them on the chicken. Make sure the chicken ends up breast side up in the crock pot for cooking.
  4. Cut up butter pads and add them to the top of the chicken.
  5. Place cut lemon in the cavity of the chicken
  6. Pour 1/4 cup water or broth around the chicken
  7. Set crock pot on low for 6-8 hours
  8. After the chicken is done cooking, remove the bones and return the shredded meat back into the crock pot juices.
Maple Bacon Dijon Glaze
  1. Add all three ingredients to a small pot on the stovetop
  2. Simmer for approximately 5 minutes to slightly thicken
Assembly
  1. Serve the chicken over mashed potatoes, rice, or whatever you like. Add the maple bacon dijon glaze over the top just before serving.
