Take one of the large burrito tortillas and place it in the bottom of a cast iron skillet. I used avocado oil to coat the bottom of the skillet.
Layer on a good amount of shredded swiss cheese.
Layer corned beef lunch meat
Light layer of sauerkraut
Light drizzle of Thousand Island dressing, or the amount to your liking
Another lighter layer of the corned beef lunch meat
Add a layer of Mexican melting cheese blend
Top with another burrito-sized tortilla
Cook in the skillet until the bottom tortilla is golden brown
Flip the quesadilla and cook on the other side until golden brown
Cut into slices and serve!
