Ruben Quesadillas

Ingredients
  

  • Tortillas As many as you need to feed your crew. I did the full-size burrito tortillas and cut them into 6 quesadilla slices. Each guy got 4 slices and they said it was plenty.
  • Corned Beef I used approximately ¼ lb of lunchmeat-style corned beef per full-size quesadilla
  • Sauerkrat One 12 oz can was enough for 6 full quesadillas
  • Swiss Cheese One pound shredded was enough for the 6 full quesadillas
  • Mexican Blend White Melting Cheese I always buy a big bag of this and don’t know exactly how much I used. You can never have too much cheese.
  • Thousand Island Dressing 1 bottle to drizzle inside quesadillas. I only used a partial bottle.

Instructions
 

  • Take one of the large burrito tortillas and place it in the bottom of a cast iron skillet. I used avocado oil to coat the bottom of the skillet.
  • Layer on a good amount of shredded swiss cheese.
  • Layer corned beef lunch meat
  • Light layer of sauerkraut
  • Light drizzle of Thousand Island dressing, or the amount to your liking
  • Another lighter layer of the corned beef lunch meat
  • Add a layer of Mexican melting cheese blend
  • Top with another burrito-sized tortilla
  • Cook in the skillet until the bottom tortilla is golden brown
  • Flip the quesadilla and cook on the other side until golden brown
  • Cut into slices and serve!
