Marinated Grilled Chicken Thighs
Ingredients
- 2 lbs Bonesless Skinless Chicken Thighs This is for one batch of marinade. I tripled the recipe to feed our crew and to have leftovers
Marinade
- 1/2 cup olive oil
- 1 lemon (zested first, then juiced)
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp fresh parsley chopped
- 2 tsp minced garlic
- 2 tsp salt
- 1/2 tsp pepper
Instructions
- Whisk together the ingredients in a large bowl
- Add the chicken breasts and mix around with a tongs to coat
- Cover and refrigerate for at least 1 hour and up to 24 hours
- Throughout the marinade time, flip the chicken around in the marinade a couple of times
- My favorite way to cook the chicken is on our smoker, but a grill will do well too
- Cook at 400 F for approximately 6-8 minutes per side or until internal temperature reads 165
