Marinated Grilled Chicken Thighs

Ingredients
  

  • 2 lbs Bonesless Skinless Chicken Thighs This is for one batch of marinade. I tripled the recipe to feed our crew and to have leftovers

Marinade

  • 1/2 cup olive oil
  • 1 lemon (zested first, then juiced)
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp fresh parsley chopped
  • 2 tsp minced garlic
  • 2 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Whisk together the ingredients in a large bowl
  • Add the chicken breasts and mix around with a tongs to coat
  • Cover and refrigerate for at least 1 hour and up to 24 hours
  • Throughout the marinade time, flip the chicken around in the marinade a couple of times
  • My favorite way to cook the chicken is on our smoker, but a grill will do well too
  • Cook at 400 F for approximately 6-8 minutes per side or until internal temperature reads 165
